Foo Foo Mama Choo Hot Sauce By: High River Sauces
Introduced in 2014, “Foo Foo Mama Choo” is High River Sauces’ Carolina Reaper hot sauce.
This bold, savory sauce is something of an Italian-Asian fusion, with fire-roasted tomatoes and sweet red bell peppers joined by sweet and tangy rice wine vinegar, spicy ginger, soy sauce, white pepper, and brown sugar.
Garlic and onions act as the bridge between the sauce’s Italian-style base and Asian-inspired spices. While the soy sauce is subtle, its rich umami notes enhance the flavors of the tomatoes, peppers, and spices. The rice wine vinegar, meanwhile, provides both acidity and a hint of sweetness.
At the heart of this flavorful hot sauce is the Carolina Reaper, currently recognized as the world’s hottest pepper. Although the Reaper is not a particularly floral pepper on its own, High River Sauces uses the rice wine vinegar and spices to intentionally highlight its floral notes. The sweet, fruity flavor and fiery heat of the Carolina Reaper pair perfectly with the roasted bell peppers, tomatoes, herbs, and spices.
Although High River Sauces’ Foo Foo Mama Choo packs an intense fiery punch, you will remember it for its sweet and savory pepper blend as well as its fire-roasted tomatoes and spices.
Use it with everything from pizza and pasta dishes to vegetable stir-fries to chicken wings to quesadillas to eggs and other savory breakfast fares.
