Batch #218 ''Louisiana Style'' Hot Sauce By: Original Juan
Made in small batches from fermented cayenne and habanero pepper mash, Pain Is Good: Batch #218 is Original Juan’s take on a classic Louisiana-style hot sauce… but its chunky tomato base, savory spices, and fiery habanero heat are anything but traditional.
Although the cayenne dominates the pepper blend, the fruity, citrusy flavor of the habaneros shines through as well, highlighted by a dash of lime juice. Brown sugar helps to tame the habaneros’ distinctive sharp burn.
The chile peppers are backed by the seasoned tomato base, along with just the right amount of savory garlic. The sauce contains white vinegar as well as malt vinegar, which provides both tangy acidity and a subtly sweet, yeasty note that, when combined with the spices and natural smoke flavoring, gives Batch 218 a strong “barrel-aged” flavor.
To make things even more interesting, the flavor of the tomato base is very reminiscent of a Bloody Mary, thanks to the celery salt and Worcestershire sauce in the seasoning. A touch of paprika brings out the flavor of the tomatoes while keeping the focus on the cayenne and habanero peppers.
There’s a lot going on in this spicy but approachable sauce, and the tomatoes, garlic, spices, brown sugar, and malt vinegar all work together to complement the pepper blend.
