CaJohn’s has created a spicy wing sauce for serious chileheads with their Jolokia Wing “10” sauce… but despite its name, this is not just a ghost pepper (“Jolokia”) wing sauce.
It is actually CaJohn’s “Ace” hot sauce - a Red Savina habanero-based sauce with hints of Chile Caribe, savory vegetables, and a spicy black pepper undertone - that provides the base for this wing sauce. This hot sauce is then combined with cayenne and ghost peppers, tomato paste, garlic, more black pepper, and butter, before being blended to a smooth consistency.
With Jolokia Wing “10”, you won’t find any bitterness, or any of the oiliness that often plagues wing sauces made with butter. The subtle buttery flavor lingers in the background behind the peppers, vegetables and spices. The bold, fruity taste of the Red Savina - one of the hottest habanero pepper varieties - is highlighted by the tomatoes and vegetables (mainly sweet bell peppers and carrots), along with a touch of sugar and salt. Savory onions, garlic and black pepper provide balance. The cayenne and ghost peppers play more of a supporting role to the fruity Red Savina habaneros, but upon tasting this sauce, the heat from all three peppers is immediately apparent… and the ghost pepper burn just keeps on building.
