Rattler BBQ Sauce By: High River Sauces
Rattler BBQ Sauce is a collaboration between High River Sauces and celebrity chef Chris Santos.
This moderately spicy sauce gets its name from its star ingredient, the cascabel chile pepper (also known as the “rattler chile” because the pepper’s seeds make a rattling sound when the dried pods are shaken). The dried cascabel chiles give this sauce a robust smoky and earthy flavor, along with sweet raisiny notes that are further enhanced by real raisins.
Savory cayenne and orange habaneros round out the pepper blend, bringing additional flavor and heat while keeping the focus on the cascabel chiles.
Tangy apple cider vinegar brightens up the taste of the peppers, bringing the sauce’s heat to a spicy but approachable level.
Undertones of coffee and molasses add depth of flavor, along with hints of tomato, onion, garlic, and Worcestershire sauce. Although the flavor of the coffee is subtle, it helps to balance the sauce’s sweetness and acidity, bringing out the earthiness of the cayenne and cascabel chiles.
Honey and brown sugar join the molasses to highlight the natural sweetness of the tomatoes, raisins, and peppers, while Dijon mustard provides a slightly spicy counterpoint.
There’s a lot going on in this tangy, savory BBQ sauce, but its bold flavors all harmonize beautifully, and the cascabel peppers are perfectly showcased.
