Naga Jolokia peppers (a.k.a. ghost peppers) are the star ingredient in Irazu’s “Ghost Pepper Extreme 70” hot sauce… the “70” in the name signifies that the sauce consists of 70% pure ghost pepper.
Just five ingredients make up the other 30%: water, salt, vegetable oil, garlic pulp, and acetic acid (vinegar). The salt highlights the ghost peppers’ savory flavor while downplaying their fruity and floral notes. Although the vinegar’s acidity balances the salt and helps to amplify the peppers’ heat, its flavor is barely noticeable. The garlic, while extremely subtle, brings a savory undertone that rounds out the sauce’s flavor profile.
Almost a “hot sauce/pepper mash hybrid”, Irazu Ghost Pepper Extreme 70 features pure ghost pepper flavor and more than enough heat to earn its “Extreme” designation, but with a unique twist… this sauce showcases the more savory side of the ghost pepper, with very little bitterness and no floral taste.
